For Mother's Day I decided to make myself a chocolate cake, and what goes better with chocolate than Coke? Nothing, except for a nice cup of hot tea! I know, I know most are thinking what? why not milk? Well, milk tends not to agree with me and of late I am cold rather than hot, so I drink at least 3-4 cups of hot tea a day! So before making dinner, which consisted of Garlic Lemon Cheese stuffed chicken (absolutely delicious) with green beans and corn, I made my cake with the help of Nick.
INGREDIENTS
CAKE:
1/2 cup Butter
1/2 cup Vegetable Oil
1 cup Coca-Cola
2 cup flour
2 cup sugar
1 tsp baking soda
3/4 cup Unsweetened Cocoa Powder
2 eggs
1/2 cup Buttermilk (or 1/2 cup Milk and 1 tsp Lemon Juice)
2 tsp Vanilla
ICING:
1/2 cup Butter
1/4 cup Coca-Cola
1/2 cup Unsweetened Cocoa Powder
3 cups powdered sugar
1 tsp Vanilla
Directions:
Preheat oven to 350 degrees. Grease and flour a 13×9 cake pan. In a bowl, mix together flour, sugar, baking soda, and cocoa powder. Mix in buttermilk and vanilla. Next, add each egg separately until fully combined. Set aside.
In a saucepan, melt the butter, then add the Coke and oil, and bring it all to a boil. Remove from the heat. Pour over cake mixture and stir well. Pour into prepared pan and bake for 30 minutes or until toothpick comes out clean.
Mix butter, cocoa, and coca cola in saucepan and bring to a boil. Remove from heat and add powdered sugar and vanilla, stir.
Frost the cake while it is still warm.
